As much as I love baking from scratch, I live a very busy life and there isn’t always time for that! I still want to eat delicious and nutritous food, but sometimes I just need something quick! That is where mixes come in to save the day!
I got the wonderful opportunity to try some protein pancake mixes from Stack’d Nutrition. All I need to do is add some water and egg and I have a homemade looking and tasting breakfast!
I got to try four flavors: The macros vary slightly, but are all about 240 calories 3F 26C 25P for the mix alone. The mixes are made with 100% organic whole grains, gluten free oat flour, and casein protein. No refined sugars, artificial sweeteners/flavorings, or sugar substitutes.
They all sounded wonderful! It was hard to choose which to try first!
Since pumpkin season is upon us, I decided to go with Pumpkin Spice.
I kept it simple to start and just followed the directions to make a glorious stack of pancakes. They recommend making 3 pancakes, but I like mini food so I made 8 tiny pancakes!
I covered them in some sugar free syrup.
I liked the soft and slightly chewy texture. They weren’t super pumpkin-y, but I could definitely taste the pumpkin and cinnamon. I kinda wish it was a “just add water” mix, but throwing in some egg substitute isn’t that big of a deal.
Anyone who says pancakes are just for breakfast is crazy!! I whipped up some more Stack’d goodness for dinner! This time I tried the KokoNut.
Oh yes! I got a little fancier this time around! I made 4 bigger pancakes and layered them with nonfat vanilla yogurt. Topped off the stack with some unsweetened coconut and dug in!
Again, the flavor wasn’t overwhelming but I could taste some coconut for sure. Nice and fluffy too!
So we know the mixes make great pancakes! What else can I make with it?!
How about some adorable Cinnamon Mini Muffins with cream cheese frosting!? These were super simple! I just made the buttermilk mix according to the directions but added a dash of cinnamon to the batter. Then I just baked it into mini muffins! 350 for about 12 minutes.
I topped them off with some fat free cream cheese and a sprinkle of cinnamon!
I really enjoyed these!! I felt like I was eating cupcakes for breakfast! They still tasted like good old buttermilk pancakes, just in a cuter form! Not too sweet and the 25 grams of protein kept me full for quite a while!
I still had one more flavor to try! What better way to end the post than with some Peppermint Mocha waffles!
Not just any Peppermint Mocha waffles though! These are topped with white chocolate chips, chopped Andes Mints, a blob of chocolate peanut butter, and a York Peppermint Patty!
Chocolatey minty perfection!
