Cake Mix Cupcakes

Don’t worry…I am not sick…but I am going to be making cupcakes using a mix from a box!! Of course, I am still going to tweak it a bit and make it “Kim Style”
That usually means adding protein powder!
Cake mix cake is delicious.  I don’t know what it is but cakes, cupcakes, and cookies from a box mix always turn out pretty awesome! These still taste great and by altering the instructions a bit, they end up being a little “better” for you!
You are actually going to use fewer ingredients than if you would follow the instructions on the box.  No eggs, oil, milk, or even water needed!
Yup, thats it! You only need three ingredients.  Cake mix, protein powder, and diet pop! Flavor combinations are endless.  As you can see I chose confetti cake mix, vanilla protein powder, and diet 7up.
You could also try:
*Chocolate cake mix, peanut butter protein powder, and diet Dr. Pepper*
*Vanilla cake mix, cake batter protein powder, and diet cherry 7up*
*Red velvet cake mix, chocolate protein powder, and diet Pepsi*
Get creative!!

For the frosting you just need fat free cream cheese and vanilla.  I added a sweetener too.
You can do a number of different things for the frosting…
*Mix nonfat greek yogurt with protein powder*
*Top with fat free whipped cream*
*Mix up some sugar free pudding*
Once again…get creative!
I love this recipe because you can make as many cupcakes as you want! I made what I consider a single serving.  It ends up being 3 regular sized cupcakes or 10 mini cupcakes!
You are just going to mix together 1/4 cup cake mix, 1 scoop protein powder, and 1/3 cup pop.  If you were to weigh out the cake mix and protein powder, you would see that we are using equal amounts.  So if you want to make more, just double or triple the amount of everything you use! Just be sure to use equal amounts of protein powder and cake mix!
Pour the batter into whatever size pan you like.  I made a batch of mini cupcakes here.
I didn’t have liners, but I made sure to spray the pan quite liberally! The little treats popped out just fine.
Into the oven they go.  Preheated at 350.  Mini cupcakes took about 7 minutes and normal sized ones needed 12-13 minutes.
How cute!! Love the little confetti specks!
Let them cool while we mix up the frosting.
Side note…you can absolutely eat these without frosting! I made up an extra batch like this and had myself 10 little confetti muffins! Awesome little breakfast! They freeze great so feel free to make a lot of them!
For the frosting just mix together some cream cheese, vanilla, and sweetener.  I used about 2 tablespoons to frost one single serving batch.  Add vanilla and sweetener to taste.
I absolutely love this cream cheese mixture! I will mix up a big container of it and keep in the fridge. It is great to dip pretzels in, spread on rice cakes, or as a fruit dip!
It is going to serve as the perfect cupcake frosting today.  As you can see, we have switched back to the bigger cupcakes.
They look pretty awesome…but I think I know how to make them just a little bit better!

Oh, and sprinkles don’t have calories…if someone tells you differently, they are a big liar!
Now that is one fantastic dessert! And once again, all 3 is what I consider one serving! That’s because the whole batch is only 275 calories!
 And yes, they still taste fantastic! They are very light and I love the extra protein boost!
I took some of these to my parent’s house (see…I do share sometimes…) Everyone loved them!! My parents own their own bakery so they know their sweets!
So now you can finally use that boxed cake mix that has been sitting in the cupboard forever!!
Cake Mix Cupcakes
Yields 3

  1. 1/4 cup funfetti cake mix (30g)
  2. 1 scoop MTS vanilla protein powder (30g)
  3. 1/3 cup diet lemon lime pop (80ml)
  1. 2 T fat free cream cheese (33g)
  2. 1/2 t vanilla
  3. sweetener to taste
  1. 1. Mix together cake mix, protein powder, and pop.
  2. 2. Pour batter into muffin cups (try mini ones too!)
  3. 3. Bake at 350 for 12-13 minutes (8min for mini)
  4. 4. Mix together cream cheese, vanilla, and sweetener.
  5. 5. Let cupcakes cool and frost.
  1. Try different flavors of protein and cake mix!

  1. Such a good idea, can’t wait to try it when I finally have protein powder again 🙂 Just a heads up though, you have Fat listed twice in the whole batch macros. The 27g just about gave me a heart attack at first haha
