Valentine’s Day Treats

Valentine’s Day is right around the corner! This means lots of treats and sweets! You will get a big “go ahead” from me when it comes to indulging in some goodies, but I wanted to share some of my favorite sweet treats that are a little healthier than the typical chocolate and candy. 

The best part is that these cookies, cupcakes, and waffles still taste amazing and are super festive! I used the amazing MTS Creamy Red Velvet Cake whey for three of the recipes, but don’t worry if you don’t have it! Your goodies don’t have to be red velvet flavored – you can use vanilla, chocolate, peanut butter, or any other fun protein you have on hand!

These Red Velvet Cupcakes are perfect for any lovey! Don’t have a Valentine this year?! All the better reason to make a batch for yourself! These contain no added sugar, no flour, no oil, and no butter!

They are full of flavor and super soft! Plus, you can eat 6 cupcakes with cream cheese frosting for only 325 calories! You would be lucky to get one regular cupcake for close to that!

Whoopie Pies!

Again, no worries if you don’t have red velvet whey.  You can make chocolate, vanilla, or any other flavor of cookies!

These cookies are super soft and are perfect with some cream cheese filling.  Six cookie sandwiches are only 314 calories! Plus you are getting a whopping 39 grams of protein! You just can’t beat it!

Don’t tell anyone what is in them…I guarantee they won’t be able to guess!! They will think you purchased them from a high end bakery!

Whoopie Pies
Yields 6
Soft red velvet cookies with cream cheese filling!

For cookies
  1. 1 scoop MTS Creamy Red Velvet whey (30g)
  2. 1/2 cup canned white beans (130g)
  3. 1/4 cup canned pumpkin (60g)
  4. 3 T egg substitue (46g)
  5. 1/2 t vanilla
  6. 1/2 t baking powder
  7. sweetener to taste (2-4 packets)
For filling
  1. 4 T fat free cream cheese
  2. splash of vanilla
Instructions
  1. Drain and rinse beans
  2. Puree beans, pumpkin, egg, and vanilla. May need a little milk or additional liquid to blend smooth
  3. Stir in remaining ingredients
  4. Use parchment paper or baking mat and drop batter on cookie sheet
  5. Bake at 350 for 8-10 minutes
  6. Mix together cream cheese and vanilla
  7. Let cookies cool and make into whoopie pies!

These are super simple! Just use the whoopie pie cookie recipe and add some white chocolate chunks!

I use this recipe for breakfast cookies quite often! You can have the entire dozen for 325 calories.

When is the last time you heard of 12 cookies being one serving?! Well, I said it! This is a single serving recipe!

Last, but certainly not least is the perfect Valentine’s Day breakfast! Make your Hunny these for breakfast in bed and I guarantee they will thank you!

I use my favorite protein pancake mix to make this beautiful creation! It is called FlapJacked and you must try it!! One serving of the mix is 180-200 calories plus 15-17 grams of protein.  All you need to do is add water and bam – protein goodness!

I used the buttermilk mix and just added some red food coloring and chopped strawberries.  Topped off with some vanilla ice cream and sprinkles of course! Don’t have a waffle maker? Works for pancakes too!! You can even make muffins with the batter!

And just in case you haven’t tried FlapJacked Protein Pancake Mix yet, you can use regular (aka boring) mix.

But whatever you do, don’t forget the sprinkles!! Seriously…your Valentine will be very upset if you do…

So there ya have it, some “healthier” treats and sweets for you and your lovey! But remember, a piece of chocolate or two (or six) is perfectly acceptable! It is a special occasion after all!
