Peanut Butter Blossoms

Can you really choose a favorite Christmas cookie? Sugar cookies, gingerbread, thumbprints…

But if I had to choose…


I will always go with Peanut Butter Blossoms!

There’s peanut butter.
There’s chocolate.

It doesn’t get any better!


Actually, it does get better!! I found a way to make my favorite Christmas cookie good for you.

A few not so-ordinary ingredients make these cookies gluten free, high protein, low sugar, and still surprisingly delicious!


If you hadn’t already guessed, one main ingredient is protein powder.  It’s a great substitute for sugar in a lot of recipes and gives a nice protein boost!

Everyone’s first response is “Can you taste them?!”

NOPE! Beans and pumpkin both have a very mild flavor so you really cannot taste them.
When you blend the two together, it makes a great consistency for baking!

A few other ingredients and there ya have it.
